ratatouille DVDJACKETsmallCooking up Ratatouille for School Lunches, Farm to School Style!

Winnebago County Farm to School and the food service staff from Omro, Winneconne, and Oshkosh school districts are teaming up to prepare and freeze 1250 lbs of Ratatouille sauce to be served this school year. The sauce will feature locally-grown tomatoes, squash, eggplant, peppers, onions, garlic, and fresh herbs from farms within a 50 mile radius. Over 12,000 students will have the opportunity to eat the ratatouille sauce in their school lunch in various dishes like pasta, wraps, and pizza. Fun school events will be held to promote the sauce, like showing clips of the movie Ratatouille, sending home colorful fliers with nutrition information, recipes and games, and having volunteers hand out samples of the dish while inspiring the children to try it.

Buying and eating locally-grown food is a great way to support local farmers and eat healthy food. Omro, Oshkosh and Winneconne schools will be serving up several version of Ratatouille this school year. Growing Oshkosh is helping elementary and middle schools install, plant and harvest veggies in school gardens.
